Chicken Cordon Bleu


4 Boneless/Skinless Chicken Breasts

1/4 tsp. Freshly Ground Pepper

1/8 tsp Salt

3 wedges of Laughing Bell Cheese

2 Tbls. Light Sour Cream

4 Tbls. Panko Bread Crumbs

1 tsp (approx) Fresh Parsley, chopped

2 tsp. Extra Virgin Olive Oil (EVOO)

8 pcs. Thinly Sliced Deli Ham



Preheat Oven 375 degrees

  1. Salt & Pepper both sides of chicken breasts
  2. Heat an oven ready sauce pan with 1 tsp. of EVOO (be sure to also spray with non-stick spray)
  3. Place chicken breasts into pan and cook for about 5 mins on each side until browned.
  4. While chicken is cooking, combine bread crumbs and chopped parsley with 1 tsp. of EVOO in a small bowl.
  5. In another small bowl combine laughing bell cheese and sour cream.
  6. After both sides of chicken are browned, move all chicken pieces to center of pan and spread cheese mixture evenly over all the chicken. Top with 2 pc. of ham on each chicken, then top with the bread crumb mixture.
  7. Place the chicken in the pre-heated oven for about 30-40 mins, or until chicken is throughly cooked (needs to reach an inside temp of 165 degrees).
